Sous Vide Cod

Ingredients:
cod 1lb
Heavy cream, 1 cup
1 onion, thinly sliced
4 garlic cloves, thinly sliced
1/4 bunch of drill, chopped
Drill oil
1/2 cup of diced squid

For cod
1. Confit or Sous-vide the cod and squid for 135°F
For 23 minutes. Confit the squid in veg oil at same temperature
2. After, transfer it into ice water to cool down. Slice a cod to desired thickness and for squid, dice it and set it aside to mix to with the sauce

For sauce
1. caramelize 1 thinly sliced onion and 4 sliced garlic
2. Put the heavy cream and reduce 1/3
3. Blend it or strain it
4. Prepare 1/4 bunch of chopped dill, diced (cooked) squid, about 15 capers, and also good quality olive oil or herb-infused oil into the sauce, and mix it all together

For assemble, put sauce and cod and Garnish with Dill
